Expresso Cookies

Coffee and cookie lovers unite.

I love coffee and chocolate chip cookies, but I never thought of putting them together just recently. Ever since I have it's been a fan favorite in my household. List of the equipment you'll need:

  • Two Bowls One Larger Than The Other
  • A Spatula
  • Measuring Spoons/Cups
  • At Least One Baking Sheet
  • Parchment Paper
  • Whisk/ Electric Whisker
  • Oven
  • Cooling Rack/ Plate

After you ensure you have those we can get started getting all the ingredients.

  • 1 cup of salted butter/ 2 sticks
  • 1 cup of white granulated sugar
  • 1 cup of brown sugar (Packed)
  • 2 TSP of vanilla extract
  • 1/2 TSP of coffee (Optional)
  • 2 large eggs
  • 3 cups of all-purpose flour/ baking flour
  • 1 TSP of baking soda
  • 1/2 TSP of baking powder
  • 1/2 TSP of sea salt
  • 1 cup of chocolate chips or 1 1/2 cups of mini chocolate chips
  • 1 cup of expresso chips

Now that you have all that you can start on the recipe.

INSTRUCTIONS

  1. Preheat the oven to 375 degrees Fahrenheit
  2. Prepare baking sheets with parchment paper. Set Aside
  3. In a bowl put combine flour, baking soda, baking powder, and salt. Set Aside
  4. Cream together: Sugar, Brown Sugar, and Butter
  5. Beat in eggs, vanilla, and coffee. Until it becomes fluffy
  6. Mix together dry ingredients
  7. Fold in chocolate chips and expresso chips
  8. Roll cookie dough into ball. 1 TBS of dough makes small cookies. 3 TBS makes normal-size cookies. 5 TBS make monster cookies.
  9. Place balls evenly on the prepared baking sheet
  10. Bake in preheated oven for approximately 8-10 minutes. Take them out when they start to brown.
  11. Let cookies sit on a sheet for 2-3 minutes. Then move to the cooling rack or plate.

EXTRA STUFF

Most of this next stuff isn't necessary, but helpful. If you run out of any of the ingredients here are some substitutes.

  • Butter: There are a few different types of things you can use. Different types of oil ( Coconut, Olive, Vegetable, Avocado), pumpkin puree, apple sauce, greek yogurt, or bananas. 1 to 1 measurement.
  • Baking Powder: 1 part baking soda and 2 part cream of tarter.
  • Baking Soda: 1 TBS of Baking Soda = 3 TBS Baking Powder.
  • Sugar: 1 cup of sugar= 1/4 cup honey, 1 cup= 1 TSP stevia, 1 cup= 2/3 Agave Nectar, or 1 cup=3/4 maple syrup.
  • Vanilla Extract: 1 to 1 measurement. You can use syrup, almond extract, rum, brandy, vanilla milk, or vanilla bean.

Make sure to not over-bake the cookies. If you overbake them they will be extremely hard. I pull mine out when they start to brown which makes them just about perfect. If you are having trouble attaching the parchment paper put oil down first on the baking sheet.

For the coffee, I have done a lot of different kinds. Now it doesn't really change the taste by a ton, but if you put more in there and add more flour to the batter, it will alter the taste in a very good way. If you love a stronger brew choose a darker coffee. Death Wish coffee is one of the best dark brews for stronger-tasting cookies. Light coffee makes the cookies more subtle in flavor. I enjoy a blonde brew of Folgers for the lighter subtler taste. Medium is the perfect blend of both. Blackout Coffee Co. makes an amazing medium brew. What you choose is up to your personal taste.

The best part of these cookies is that it's an amazing pick-me-up. Perfect for an early morning snack or an afternoon burst of energy. Maybe you are studying for a hard test or just need to get through the day, either way these are perfect for you.
