BBQ Recipes for Every Occasion: From Family Gatherings to Backyard Parties

As it’s getting a little colder here in Brisbane, it’s the perfect time to fire up the barbecue and get some warmth in you. Here are some of my favourite BBQ recipes to cook with the family!

Classic BBQ Sausages with Onion Relish

Ingredients:

1 kg of good-quality beef or pork sausages

3 large onions, thinly sliced

2 tbsp olive oil

2 tbsp brown sugar

2 tbsp balsamic vinegar

Salt and pepper to taste

Instructions:

Prepare the BBQ: Preheat your barbecue to medium heat.

Cook the Sausages: Place the sausages on the BBQ and cook, turning occasionally, for about 15-20 minutes or until evenly browned and cooked through.

Make the Onion Relish: While the sausages are cooking, heat olive oil in a frying pan over medium heat. Add the onions and cook until they start to soften. Add brown sugar and balsamic vinegar, then cook until the onions are caramelised. Season with salt and pepper.

Serve: Serve the sausages hot off the grill with a generous spoonful of onion relish.

Grilled Chicken Skewers with Honey Soy Marinade

Ingredients:

1 kg chicken breast or thighs, cut into bite-sized pieces

Wooden or metal skewers

1/4 cup soy sauce

1/4 cup honey

2 garlic cloves, minced

1 tbsp grated ginger

2 tbsp olive oil

1 tbsp sesame seeds (optional)

Fresh coriander for garnish

Instructions:

Marinate the Chicken: In a large bowl, mix soy sauce, honey, garlic, ginger, and olive oil. Add the chicken pieces and marinate for at least 30 minutes.

Prepare the Skewers: Thread the marinated chicken onto the skewers.

Grill the Skewers: Preheat the BBQ to medium-high heat. Grill the skewers for about 10-12 minutes, turning occasionally, until the chicken is cooked through and slightly charred.

Serve: Sprinkle with sesame seeds and garnish with fresh coriander before serving.

BBQ Prawn and Mango Salad

Ingredients:

1 kg large prawns, peeled and deveined

2 ripe mangoes, peeled and sliced

1 red onion, thinly sliced

1 red chili, finely chopped

1/4 cup lime juice

2 tbsp fish sauce

1 tbsp brown sugar

1/4 cup fresh mint leaves

1/4 cup fresh coriander leaves

Instructions:

Prepare the Dressing: In a small bowl, mix lime juice, fish sauce, and brown sugar until the sugar is dissolved.

Grill the Prawns: Preheat the BBQ to high heat. Grill the prawns for about 2-3 minutes on each side or until they are pink and cooked through.

Assemble the Salad: In a large serving bowl, combine the grilled prawns, mango slices, red onion, and red chili. Pour the dressing over the salad and toss gently to combine. Garnish with mint and coriander leaves.

Serve: Serve the salad immediately while the prawns are still warm.

BBQ Lamb Chops with Mint Yogurt Sauce

Ingredients:

1 kg lamb chops

2 tbsp olive oil

Salt and pepper to taste

1 cup Greek yogurt

1/4 cup fresh mint leaves, finely chopped

1 garlic clove, minced

1 tbsp lemon juice

Instructions:

Season the Lamb Chops: Rub the lamb chops with olive oil and season generously with salt and pepper.

Grill the Lamb Chops: Preheat the BBQ to medium-high heat. Grill the lamb chops for about 4-5 minutes on each side for medium-rare, or until cooked to your liking.

Prepare the Mint Yogurt Sauce: In a small bowl, combine Greek yogurt, mint leaves, garlic, and lemon juice. Mix well and season with salt and pepper.

Serve: Serve the grilled lamb chops with a dollop of mint yogurt sauce on the side.

Grilled Pineapple with Cinnamon Sugar

Ingredients:

1 whole pineapple, peeled, cored, and cut into rings

1/4 cup brown sugar

1 tsp ground cinnamon

Vanilla ice cream (optional)

Instructions:

Prepare the Pineapple: Preheat the BBQ to medium heat. In a small bowl, mix brown sugar and cinnamon.

Grill the Pineapple: Sprinkle the pineapple rings with the cinnamon sugar mixture. Grill the pineapple for about 2-3 minutes on each side or until caramelized and slightly charred.

Serve: Serve the grilled pineapple warm, with a scoop of vanilla ice cream if desired.
